Banana Muffins


These banana muffins were my mom's favorites. She loved banana bread and muffins! You can adapt these by adding nuts or chocolate chips (for the kids).

Ingredients:

1-3/4 Cups all-purpose flour (I cheated and used self-rising because I was out of all-purpose. If you use self-rising-omit the baking soda, baking powder and salt)

3/4 cup Sugar

1 teaspoon baking powder

1 teaspoon baking soda

1/2 teaspoon salt

1 egg

1/2 cup vegetable oil

1/2 cup Milk or plain yogurt

1 teaspoon vanilla extract

1 cup mashed ripe bananas (about 2-3 medium sized)


Directions:


In a large bowl, combine the flour, sugar, baking powder, baking soda, and salt. In another bowl, combine the egg, oil, milk and vanilla.

















Stir liquid ingredients into dry ingredients just until moistened.


Fold in mashed bananas and (nuts or chocolate chips, if desired)
Fill greased or paper-lined muffin cups 2/3 of the way full. Bake at 350 degrees for 22-25 minutes or until a toothpick comes out clean.



Cool for 5 minutes before moving from baking pan.


Note: The top 6 muffins have streusel: to make streusel you need

1/4 brown sugar

1/2 teaspoon ground cinnamon

1 tablespoon cold butter or margarine

1/4 cup finely ground nuts (I like walnuts with these)

Combine brown sugar and cinnamon, cut in butter until it resembles coarse crumbs. Sprinkle on over batter and bake.
