Banana Muffins


These banana muffins were my mom's favorites. She loved banana bread and muffins! You can adapt these by adding nuts or chocolate chips (for the kids).

Ingredients:

1-3/4 Cups all-purpose flour (I cheated and used self-rising because I was out of all-purpose. If you use self-rising-omit the baking soda, baking powder and salt)

3/4 cup Sugar

1 teaspoon baking powder

1 teaspoon baking soda

1/2 teaspoon salt

1 egg

1/2 cup vegetable oil

1/2 cup Milk or plain yogurt

1 teaspoon vanilla extract

1 cup mashed ripe bananas (about 2-3 medium sized)


Directions:


In a large bowl, combine the flour, sugar, baking powder, baking soda, and salt. In another bowl, combine the egg, oil, milk and vanilla.

















Stir liquid ingredients into dry ingredients just until moistened.


Fold in mashed bananas and (nuts or chocolate chips, if desired)
Fill greased or paper-lined muffin cups 2/3 of the way full. Bake at 350 degrees for 22-25 minutes or until a toothpick comes out clean.



Cool for 5 minutes before moving from baking pan.


Note: The top 6 muffins have streusel: to make streusel you need

1/4 brown sugar

1/2 teaspoon ground cinnamon

1 tablespoon cold butter or margarine

1/4 cup finely ground nuts (I like walnuts with these)

Combine brown sugar and cinnamon, cut in butter until it resembles coarse crumbs. Sprinkle on over batter and bake.

Hey - a random question here.. what is the weather like up there right now? I "may" be headed up there at the end of this month.

Wondering how cool its been getting. Want to prepare what to pack. (I've been up there before SEVERAL times. Got married in the smokies.)

But we always go in the dead of winter. Never been in the fall. So I was wondering what I should expect? And since you are there.. i thought I would ask. ;o)

Kim, The end of the month is a great time to come here to visit. The fall leaves should be in full color by then. The weather for the next week is going to be really nice in the 70's and lows in the 40's. It should stay like that until the end of the month (as long as no cold fronts drop in on us) If your up this way shoot me a note and maybe we can get together for coffee or something.

Oh goodness! That sounds wonderful and chilly! I can hardly contain myself! I had better pack some warmer clothes. It isn't near that chilly here! We are to get a "cold" front this weekend. I should say a "cool" front. ha!

Oh perfect! I was worried I had already missed the changing of the leaves. I have ALWAYS wanted to come up during that time! Great! I'm glad I won't miss a bit of it! Hurray!

Oh that would be fantastic! I will definitely pop you a little note! Maybe we can grab a cup of joe!

I do have to say I will be stocking up on Coffee from the Coffee and Co. in the Village. And baking goods from the Old Mill. There is no coffee as rich and sweet and no baking goods as wonderful as the homemade ones that are up there! It's always such a treat!
